Nico Simeone has brought his storytime cooking to Edinburgh with the opening of Six by Nico in the New Town.

Every six weeks at 97 Hanover Street, the restaurant menu will change in accordance with various themes, drawn from his kitchen’s memories and experiences.

Six by Nico Edinburgh launches with ‘The Chippie’, the same theme that launched the Glasgow restaurant and inspired by his Italian descendants.

Born in Glasgow to Italian parents, Simeone has previously worked at the Number One restaurant at the Balmoral Hotel, in Edinburgh, as well as Chardon d’Or, in Glasgow.

When he launched Six by Nico in Glasgow last year the chef said the concept had been inspired by his team’s “experimenting with new ingredients and developing and creating new dishes”.

“My Nonna and Nonno came over here, opened up chip shops and my family all ran chip shops so for me ‘The Chippie’ is a memory, from when I used to work in it all the time,” he says.

“I wanted to create a six-course tasting menu taking flavours and inspirations from that.”

The £28 menu kicks off with chips, cheese and curry sauce - a light parmesan Espuma with crisp potato crumb and curry oil.

 

Speyside Beef Shin and caramelised onion form your steak pie and you haven’t had a fish supper like the Shetland cod with beer emulsion and pickled mussels .

Three cuts of pork - shoulder, hock and bello - go into the ayrshire smoked sausage accompanied with textures and flavours of celeriac and apple.

Of course, the dessert is the world-famous deep-fried Mars bar, but not as you know it - a chocolate sorbet with a caramilla nougat chocolate mouse and malt cheese cake.

‘The Chippie’ will be open at Six by Nico on 97 Hanover Street from March 30th to May 13th.
