First look at the menu at Glasgow's newest restaurant Bo & Birdy

As we reported last month, the Blythswood Hotel announced that it is set to open its brand-new restaurant and bar, Bo & Birdy, under the culinary guidance of the first female 5-star hotel executive head chef in Scotland - Gillian Matthews.

Bo & Birdy is due to open its doors on 15 May, but we took a sneak peek at the menu before the launch.

As described by Gillian, the menu "has been created to present the best of Scottish produce in what I believe will be a truly modern twist on favourite and traditional recipes."

Dishes include sharing platters, traditional favourites and light bites all created using local and seasonal produce such as I.J. Ellis cheese, Freedom Bakery and coffee from Dear Green Coffee Roasters.

The eye-catching feature bar, which is decked out with a marble top and on-trend deep green scalloped tiles, will serve a range of cocktails including the siganture Bo & Birdy gin creation as well as wines from the best of Californian and French vineyards.

The former red velvet interior features have been replaces with a cooler colour palette of earthy tones, tan leather seating and booths. Gold fixtures, marble and wooden table tops and a range of light fittings add glamour.
