American food blogger Nicole, who runs Cooking for Keeps said: "Because simplicity is what I adore about the margherita pizza, I wanted to take the same approach here. The sauce is only a few ingredients – crushed fire-roasted canned tomatoes (I like to use San Marzano or Muir Glen), plenty of sugar (I like a sweet sauce for Margherita pizza), salt, garlic and olive oil. It’s simmered for just a few minutes until all the flavors come together, then cooled to room temperature."

The first baking session is to soften the potatoes; you’ll need their centers to be soft enough to be easily scooped out."
And after adding the ingredients the second baking session begins: "The second baking session is to warm the newly stuffed potatoes, crisp up their skins, and melt the magical cheese piled on top."

Picture: Pinch of Yum Pinterest
Lindsay, full-time blogger at Pinch of Yum who loves her creation, said:"As much as I love a good MEAT-ball meatball from time to time, today we’re talking about these little vegetarian meatball nuggets of powerhouse nutrition that are inspired from the (here comes the weird zone) spicy cauliflower burgers I made and loved a few weeks ago.
The breakdown is that they’re made with cauliflower, brown rice, quinoa, oat flour, eggs, and a nice big pinch of garlic and spices. And they don’t require hours of prep. That’s it! It’s just simple, straightforward, SUPER YUM plant-based goodness in the form of vegetarian meatballs made weeknight-dinner-friendly, because real food that matches real life is where it’s at."
