Now, the talented cook and his team have confirmed that following the popularity of their Six By Nico restaurants in Glasgow and Edinburgh, they are to take the dining concept outside of Scotland for the first time.
Pecilled in for a spring opening in Northern Ireland’s capital, the addition to the growing brand’s portfolio will place the pioneering restaurant idea in Belfast’s bustling Cathedral Quarter.
The announcement follows the success of the Six By Nico in Finnieston, Glasgow, which opened in 2017, and its sister restaurant in the capital, which opened last year.

Simeone explained that he was very excited by the prospect of taking his culinary experience to the Northern Irish capital. He said: “I have visited the city and I grew up with an understanding of the strong Ulster Scots connection.
“Belfast is the perfect location for our next venture and I couldn’t think of a better location than the vibrant food and drinks scene of the Cathedral Quarter. We are really looking forward to collaborating with local businesses and have people from the city join our team.”
The £500,000 investment will see Simeone and colleagues drawing inspiration from both home and abroad to combine different ingredients, flavours, and dishes to create a brand-new themed dining experience every six weeks.
Previous themes have included Willie Wonka, Sicily, Childhood and The Chippie, with the experimental six-course set menu for the new restaurant priced at £28 per person to match the brand’s venues in Glasgow and Edinburgh, with the option to enjoy an expertly selected wine and specialist drinks pairing for an additional £25.
Six by Nico Belfast on Waring Street opens next month, creating around 40 jobs.
It’s not the first new opening Simeone has been involved in recently– in December, the entrepreneur opened Public House by Nico, a gastropub in Glasgow’s Great Western Road.
