The team behind the Michelin Guide for the UK and Ireland have announced the final additions to the 2025 guide, and one is in Scotland.
Every month the inspectors reveal the restaurants that have caught their attention and are worthy of inclusion in the Michelin Guide.
With new Stars and Bib Gourmands set to be announced next month at a ceremony in Dublin, the final additions have been added to the 2025 Guide from the inspectors who are on the road all year round, eating their way around some of the country’s best restaurants.

Only one Scottish restaurant made the list for December. It was The Three Chimneys at Talisker on the Isle of Skye that caught the attention of the Michelin inspectors.
The restaurant, which is a partnership between the long-standing Three Chimneys and whisky brand, opened in spring last year and is located at the distillery’s newly designed waterfront space on the shores of Loch Harport.
The experience invites guests to fully immerse themselves in the rugged coastal landscape of Skye, through locally sourced food and drink and a shared passion and respect for local produce and craftspeople.
The inspectors had this to say about The Three Chimneys at Talisker: “This restaurant on the western side of the island has an enviable location in more ways than one. Firstly, it’s on the edge of Loch Harport and comes with glorious views, and secondly, it’s right by the Talisker distillery – making a pre- or post-lunch tour a must for whisky enthusiasts.
“With Skye’s waters offering so much super produce, it’s no surprise to see plenty of seafood on the menu, but also expect meat dishes from local venison to traditional haggis, neeps and tatties. Talisker whisky is of course a feature and you can even have a wee dram poured over your oysters.”
When the restaurant, which was initially a pop-up, was announced in January 2024 Leigh Aitken, Talisker brand home manager said: “We’re thrilled to welcome one of Scotland’s most famous restaurants, The Three Chimneys, to Talisker’s Pop-Up space, giving our guests an unforgettable culinary experience and showcasing local ingredients.
"Working together with The Three Chimneys means we can excite our visitors with something new and ensure that Skye remains a cherished haven for enthusiasts of fine food and whisky.”
Scott Davies, the then-head chef at The Three Chimneys added: “We're super excited about our new partnership with Talisker.
"I didn’t appreciate whisky until I visited the Isle of Skye many years ago, I was fortunate to have a private tour at the distillery and had the opportunity to sample the 35 Year Old expression.
"Since that day I fell in love with the complexity coming from humble beginnings and capturing history in a glass.
"This partnership has allowed me to take inspiration from the creative process and ingredients in whisky distilling and maturation that is mirrored in the dishes.
"Our ethos at The Three Chimneys at Talisker is the best of Skye, Land, and Sea and I feel the ethos of both the Three Chimneys and Talisker are routed in local produce and the communities that make the Isle of Skye.”
