Historic Scots hotel with stunning castle views to open 'bold new culinary destination'

A Scottish hotel is set to open a new food and drink destination this month.

The Caledonian Edinburgh – a historic landmark in the city – is set to unveil its brand-new food and drink destination The Court later this month.

Following Henderson Park’s £35 million investment in renovation and the hotel’s transition to join Curio Collection by Hilton, the transformation to the food and drink offering will be the latest of large scale developments to the hotel which is affectionately known as ‘The Caley’.

The luxury hotel at the west end of Princes Street, within sight of Edinburgh Castle, has been part of the social fabric of the city for over a century, welcoming guests from all over the world and hosting famous faces such as US President Barack Obama and musical legends Roy Rogers and Gene Kelly.

The Court, in the centre of the hotel, embodies the history and character of its rich past, combining vintage luxury and mid-century design. 

A new space for residents and locals to gather and celebrate, featuring original heritage features, has a grand cocktail bar, lively terrace for dining, patisserie, lounge and a live music stage.

The all-day dining menu has been curated in collaboration with internationally acclaimed chef, Mark Greenaway, using seasonal Scottish ingredients and some of the finest local provenance. 

The Court’s staples include fresh Scottish lobster roll and 16 layer carrot cake. The Court patisserie will serve signature pastries such as the pistachio croissant and the Caledonian’s seasonally-themed Afternoon Teas – debuting its ‘Timeless Classics’ Afternoon Tea upon opening.

The Court’s cocktail bar takes centre stage, drawing inspiration from the 123 train, the fastest steam train associated with The Caledonian railways, casting back to the hotel’s history as a railway station. 

The bar will offer a selection of signature cocktails, one-of-a-kind serves, and Caledonian classics, collaborating with local suppliers, and incorporating sustainable, climate positive spirits.

The stage will feature a weekly music programme of performers set to entertain diners from a carefully placed vantage point, which allows sightlines from all corners of the 100-seat bar, terrace and lounge, and setting the stage for the ultimate social gathering.

The branding and identity of the venue has been conceptualised by The Gorgeous Group and architectural design shaped by Cunningham Mclean.

The designers’ primary aim was to provide a ‘celebratory communal atmosphere; connecting guests, whether you’re the first party there for dinner or the last one there for drinks.’

“At The Court, we’re not only providing physical spaces but an environment that reimagines networking, entertaining, dining events in an iconic building and location that only Edinburgh could offer.”
