New bakery Lannan opening in Edinburgh - the first solo venture from Darcie Maher

A new bakery will open in Edinburgh in July.

Lannan - the first bakery from Scottish baker Darcie Maher - will open its doors in Stockbridge in Edinburgh early next month.

Growing up in the Scottish Borders, Maher taught herself to bake by reading about pastry, and later honed her craft at bakeries and restaurants throughout the UK.

In 2021 she joined the bakery team at The Palmerston, in Edinburgh’s West End, where she quickly gained a cult following for her creative pastries and innovative takes on traditional British bakes.

Now Maher will open Lannan, which derives from the Scottish Gaelic for ‘house’, as her debut solo venture.

Inside, Lannan is flooded with natural light due to wrap-around windows, and the interior mixes traditional quarry tiles with detailed panelling and brass fixtures to create a contemporary, warm, welcoming space.

What's on the menu at Lannan?

The bakery’s weekly-changing menu will combine Maher’s signature bakes, from classic viennoiserie to custard slices, yum yums and iced buns, with limited-run creations using local and seasonal produce including lemon meringue tarts, dauphinois pastries and crème brûlée danishes.

If you fancy something savoury, there will also be hand pies and pala romana sandwiches using charcuterie and cheese from I.J. Mellis and The Ham & Cheese Co., and coffee will come from local roastery Obadiah.

An expansive counter provides the centrepiece to the room, overlooking the open bakery where guests can see Maher and her team at work.

Although Lannan will primarily offer food to go, guests can also enjoy their pastries at the bakery’s outdoor benches under its awning. The bakery will initially open Thursday to Sunday, 8:30am to sell out.

Lannan also has a standalone shop attached to it; the plans for this space will be shared early next year.

The bakery is backed by James Snowdon and Lloyd Morse from The Palmerston, as well as Chloe Black from Edinburgh Butter Company.
