Teams behind Ox and Finch and Ka Pao to launch fried chicken pop-up Koxedo

The teams behind Glasgow's award-winning Ox and Finch and Ka Pao restaurants are joining forces to launch Koxedo, a new fried chicken pop-up.

Koxedo will temporarily takeover Ox and Finch, which is close to the city's Kelvingrove Park.

The menu is set to be a 'chicken shop' take on some of Ox and Finch and Ka Pao's  most popular dishes, featuring own recipe fried chicken, sandwiches and sides.

With the forced closure of hospitality businesses set to continue for another couple of months, the senior
teams from both restaurants have decided to collaborate on something a bit different from their usual
offerings.

Lily Maclean, general manager of Ox and Finch said: "We’ve had a few different takeaway offerings from both restaurants over the past year whilst we’ve been dealing with closures and restrictions.

"The finish at home meal kits we did last summer were great, and really well received, but they are an expensive thing to produce, and can also involve more washing up than if you’d cooked yourself!

"We decided that we wanted to offer something tasty, fun, straightforward and more accessibly priced; the menu the chefs have come up with for Koxedo certainly ticks all of those boxes."

Speaking of the new venture and menu, Aurelien Mourez, head chef of Ox and Finch said: "We are using the same great suppliers and produce for Koxedo that we always use for Ox and Finch and followed our usual testing and development process for all of the dishes.

"Fried chicken done well is great, simple comfort food, but there are a few tricks to getting it right.

"We must have tried more than twenty variants with different cuts, dredges and marinades.

"We have a few ideas for interesting specials which we plan to try out over the weeks the coming weeks too."

Sandy Browning, head chef of Ka Pao added: "It has been great fun being back in the Ox and Finch kitchen again with Aurelien and Danny developing the recipes for Koxedo, I’ve missed those guys!

"The spicy caramel fried chicken at Ka Pao is one of our most popular dishes, so we’ve been working on a fried
chicken sandwich with a lot of the same flavours, it’s a proper decadent treat."

The menu at Koxedo will feature their own recipe fried chicken, signature fried chicken sandwiches and sides,
all inspired by dishes from both Ka Pao and Ox and Finch.

A selection of soft drinks, beer and wine to takeaway will also be on offer.

Koxedo opens for collection from Ox and Finch, 920 Sauchiehall Street, from 12pm on Friday the 5 March and will be available every Friday, Saturday and Sunday until the restaurant is permitted to reopen.

To prevent crowding and ensure that everyone is served safely, customers should select a collection time slot
and pre-order online.

Online ordering will be live from Monday 1 March via the Koxedo website.
