Opened in March this year, Six by Nico is chef Nico Simeone’s second restaurant in Glasgow. Operating as a six week pop up, each concept has a tasting menu based around a theme with a modern take on the Chippie and Childhood favourites having been served up so far.

Simeone says about his innovative culinary venture: “It is the first of its kind in Glasgow and one that we hope will add to the appeal of the already burgeoning restaurant scene in Finnieston.”

“The concept was born from our team’s love of experimenting with new ingredients and developing and creating new dishes. By challenging ourselves to do this every six-weeks we feel we have created the perfect recipe for an exciting epicurean adventure for not just our diners, but our team too.”

The latest concept is Route 66 was introduced on the restaurant’s Facebook page with this teaser video.

Described as: "Route 66 is more than just a road; it is an embodiment of the American Dream. An experience of a lifetime for travellers, adventurers, desperados and dreamers.

"The iconic stretch from coast to coast has inspired our fourth theme, taking you on a journey & exploring culinary influence from Chicago, the Great Planes, American Diners, Texas, New Mexico & California.

"Our journey may not feature the same landscapes or motels, instead shares the same spirit and essence of the most iconic highway trip of a lifetime; a trip that needs no detour."
