Equi's and Lee's of Scotland collaborate on 'ultimate summer desserts' - here's how to make them at home

With warm weather set to continue, why not make these delicious desserts to cool down?

Scottish artisan ice cream maker, Equi’s, and Lees of Scotland, have teamed up to create two Scottish desserts to mark national ice cream month, which runs for all of July.

Featuring their most loved products, the brands have created a duo of indulgent puddings in this one-off collaboration and are inviting fans to give their creations a go.

Those with a sweet tooth will love their ‘Scottish Summer Piece’ featuring Equi’s multi-award-winning Double Vanilla ice cream sandwiched between two of Lees of Scotland’s Strawberry and White Chocolate Dipped Meringues, fresh locally-sourced Scottish strawberries and a sprinkle of freeze-dried raspberries.

The ‘Strawberry Bomb' features Equi’s Strictly Strawberry vegan ice cream, Lees of Scotland creamy Snowballs, and their mini Jam Teacakes along with a drizzle of raspberry sauce.

The Scottish brands are also offering the chance to win these two special desserts on their Instagram or Facebook to mark National Ice Cream Day on 18 July.

Simply follow both brands for your chance to win ice cream goodies and sweet treats.

Equi’s, the current UK ice cream champions, are known for creating artisan ice cream using high-quality ingredients from local Scottish dairy farms, and secret family recipes that have been passed down through four generations.

The recipes

Scottish Summer Piece

INGREDIENTS:

El Perro Negro and Ka Pao team up for kitchen takeover in Glasgow 
  • Lees of Scotland Strawberry and White Chocolate Dipped Meringues,
  • Fresh locally-sourced Scottish strawberries
  • Equi's Double Vanilla Ice Cream

METHOD:

  1. Take double scoops of ice cream and sandwich between the meringues.
  2. Add strawberries
  3. Pick up with your hands and enjoy!

Strawberry Bomb 

INGREDIENTS:

  • Lees of Scotland Jam Teacakes & Snowballs
  • Fresh locally-sourced Scottish strawberries
  • Equi's Strictly Strawberry Ice Cream

METHOD:

  1. Take triple scoops of Equi's Strictly Strawberry ice cream
  2. Cut Teacakes & Snowballs in half or quarters
  3. Layer up your treats in the sundae glass.
  4. Add strawberries
  5. Tuck in!
