Following on from StrEAT in Leith, Bross Bagels will open a new shop, Brossties and Frickles, in the Waverley Mall on Thursday 20 August.

What is Brossties and Frickles?

Open seven days a week from 10am-5pm, subject to change, Brossties and Frickles will specialise in the team's new creation - bagel toasties - and fried pickles, both of which are not currently available at other Bross Bagels stores.

The new Bross Bagels shop will be located in the previous Williams & Johnson Coffee Co, in the heart of the city, next to the iconic Balmoral Hotel and opposite Edinburgh’s Apple store, with Edinburgh Castle as the backdrop.

With excellent links in and out of the city centre and direct access to the train station and bus links, Bagel fans will be able to pre-order from the online menu from the train, bus or at home before collecting from store.

The shop interiors have been designed by Leith based studio GRAS architecture practice, and the brand new opening at Waverley Mall will offer a larger sit in and outdoor capacity than the other Bross outlets.

Speaking of the opening, Larah Bross, owner of Bross Bagels said: “When this opportunity came up to open at Waverley Mall slap bang in the centre of Edinburgh, in such an amazing location, I couldn’t turn it down.

"We are excited to continue our street food vibe following the opening of Bross StrEAT in Leith which has been a great success with our brand new Brossties and Frickles - I can’t wait for everyone to try them out as it’s a whole new concept for us.

"The outdoor area we have here on Waverley’s rooftop is the perfect spot to take in the buzz of the city and fill your hole. We are excited to welcome all of our friends and other local businesses back in to the city centre.”

Daryll Bunce, director of innovation at Moorgarth who own Waverley Mall, added: “Bross is a brilliant brand with a loyal following and we welcome joining forces with Mama Bross to open it to a new audience.

"Waverley is the gateway to Scotland and we see huge potential amongst both locals and visitors. The signing of Bross also ties in with our strategy of ‘local heroes’ and scalable new food destinations coming to Waverley as we evolve our new rooftop plans and commence development in 2021.

"We are continuing to test new products and offers at Waverley during these evolving times, and believe Bross will become a firm favourite.”
