Meet the Distiller: David Livingstone, Ardnahoe distillery

David Livingstone.  Ardnahoe Distillery, Islay

What made you want to work in whisky?

Born and bred on Islay I’m a third-generation distiller. It gives me so much pride to following in my father's and grandfather’s footsteps, both of whom worked at Lagavulin.

How did you get into the distiller role you’re in now?

I was involved from the beginning at Ardnahoe, in the final phases of the build and the set up of the distillery, prior to production starting.

I then spent two years on Arran as manager of Lochranza Distillery before returning to Islay to eventually become manager at Ardnahoe.

What is something surprising that people might not know about your role?

No two days are the same! My main role is to oversee all activities within Ardnahoe Distillery including operational and Visitor Centre, but this doesn’t mean to say I sit at a desk all day.

On any given day I could be involved in production, organising contractors, servicing equipment, making repairs, changing pumps and motors, even helping out in the visitor centre, giving tours and tastings and helping with the marketing of Ardnahoe! 

What characteristics are you looking for in the whiskies you make and how do they represent the region/distillery?

In addition to the peat and smoke which Islay whiskies are famous for, we are looking for fullness of flavour and bold intensity, which are also characteristic of the region.

What was the first whisky you ever tried?

It would have been a blend, probably Teacher’s or White horse.

Tell us about your new make, and what makes it so special?

We have an emphasis on traditional methods such as wooden washbacks, long fermentation, slow distillation and worm tub condensers.

These methods produce a superb newmake which is very fruit forward whilst also complimenting the peat and smoke perfectly. 

Are you working on any exciting new releases this year?

We have just released our third core range, a full bourbon maturation at cask strength. Cask strength whisky is undiluted - bottled straight from the cask, allowing for a more intense flavour profile and more control for the drinker to dilute as they please. 

This showcases the spirit and wood flavours perfectly, bringing out notes of coastal brine, earthy peat and rich cocoa on the nose and orchard fruits, herbal tea and salted caramel on the palate. 

 Our next release will be for our Ardnahoe society members - a limited bottling due to be released in December.

Who is your whisky hero?

Having spent 25 years within the industry it would be difficult to pick just one!

Don’t get caught up on age, It’s just a number. Let the whisky speak for itself.
