The menu has been created by head chef Craig Hart, and features locally sourced produce paired with Scottish beers and spirits.
We were lucky to try the menu as it launched, and find out more about the producers, produce and how the dishes are made, thanks to chef Craig's live cooking station.
The development of the the tasting menu experience continues the restaurant's commitment to working closely with local suppliers and creating exciting, seasonal and modern Scottish cuisine for all to enjoy.
Highlights of the current menu include roasted hand dived Orkney scallop served with sweet cicely carrot pureé and puffed oats, paired alongside One Square Gin; as well as textures of Inverurie lamb, hazelnuts and capers, complemented by Innis & Gunn Rum Cask Finish Ale - a surprisingly sweet and moreish take on a traditional ale.
At £65 per person, Edinburgh foodies can also wash-down the innovative Strathdon blue trifle, served with walnut biscuit and Lochmanger grape chutney, which is paired with a 15 year-old Springbank Whisky.
The Strathdon trifle was a highlight of the night for us, as the dish is light and tasty, with wonderfully balanced flavours and textures.
Head chef Craig Hart said: “We are very excited to be launching this exciting Tasting Menu which demonstrates our philosophy and passion for bringing people a true taste of Scotland.
“For this dining experience, we have worked very closely with our local partners to bring the best seasonal produce and create something different for our guests.
“It’s also incredibly exciting to be the first restaurant to be pairing our tasting menu with Scottish beers and spirits, bringing a new dimension to our much anticipated menu for spring.”
The Tasting Menu is served Thursday, Friday and Saturday at One Square from 6pm until 9pm, and will change every season as the availability of local produce changes.
