Glasgow's first espresso martini bar to open - with 20 different cocktails available including a Biscoff martini

Insomnia, a dedicated espresso martini bar, is set to open in Glasgow.

Insomnia is a new pop-up bar that will serve a range of espresso martini drinks, which will be based inside pancake restaurant Stack and Still.

The new bar is set to serve twenty different version of the classic vodka and coffee cocktail.

The popular Stack and Still restaurant is known for being the UK’s biggest urban pancake house with their ten million plus pancake combinations, plus craft beer on tap.

The large West George Street venue provides the ideal location for Insomnia to offer late night drinks and an accompanying snack and pancake menu.

The coffee beans for all of the cocktails are freshly roasted every day on site with their own micro roaster.

What's on the menu?

The espresso martinis on sale at Insomnia are priced from £6.50 with a premium house espresso martini featuring Belvedere vodka.

Other creations include: toasted marshmallow (marshmallow infused vodka, homemade toasted marshmallow syrup); salted caramel espresso (Belvedere vodka, caramel sauce, Mr Black’s coffee liqueur, Kahlua, sea salt, vanilla foam); Biscoff martini (Ketel One vodka, cold brew espresso, Creme de Cacao, Biscoff spread syrup, vanilla foam, Lotus fiscuit).

There is also a range of tequila and mezcal martinis, including an inferno martini (mezcal, chilli Agave syrup, Mr Black’s Cold Brew, coffee liqueur, fresh espresso) and Cafe de Olla Martini (tequila, cinnamon syrup, Cointreau, fresh espresso, Kahlua coffee liqueur); plus many, many more.

The Scottish entrepreneur behind the Insomnia concept is Paul Reynolds who is joined by co-founder Graham Swankie in the Stack & Still roll out.

Paul has a proven track record in creating innovative service-focused concepts with the the multi-award winning Gin Spa, Gin71 and Cup venues forming part of his business portfolio. Stack and Still recently won the New Business of the Year at the SLTN Awards.
