With pancake day tomorrow, New York style restaurant TriBeCa in Glasgow shares their famous pancake recipe.

The day itself is celebrated in English-speaking countries like the UK, Ireland, Australia and Canada. In France, the USA and other countries, it is called 'Mardi Gras' or 'Fat Tuesday'. In others like Spain, Italy or Brazil, Shrove Tuesday is at the end of Carnival. In Scotland, pancake and American food specialists like TriBeCa in Glasgow, which has just relaunched a brand new menu, will be celebrating by going through hundreds of eggs and flour to feed its hungry fans.


  • 135g/4¾oz plain flour
  • 1 tsp baking powder
  • ½ tbsp salt
  • 2 tbsp caster sugar
  • 130ml/4½fl oz milk
  • 1 large egg, lightly beaten
  • 2 tbsp melted butter (allowed to cool slightly) or olive oil, plus extra for cooking
  • To serve: various sweet and savoury toppings to suit your mood


Mix the dry ingredients together before adding the eggs, milk and butter.
Beat until smooth.
Heat the oil or extra butter in a frying pan.
Pour enough to cover the pan, or smaller if you prefer.
Flip when the mixture starts to bubble and one side is golden.
Serve with your favourite pancake topping.
