The team at Nauticus in Edinburgh have created this refreshing gin cocktail

This cocktail uses a gin from one of Scotland's newly opened distillery - Port of Leith Distillery. Lind & Lime gin is named after Edinburgh’s Dr. James Lind, a hero of the Scottish Enlightenment, and combines flavours of lime and pink peppercorn.

Ingredients

  • 35ml Lind and Lime Gin
  • 20ml Escubac
  • 10ml Amaretto
  • 10ml Lime juice 
  • 10ml cloudy apple juice
  • Egg white
  • Handful of mint
  • Three slices of cucumber

Method

Tower Street cocktail

Add ingredients apart from the cucumber and mint to a cocktail shaker.

Dry shake before adding mint and cucumber.

Shake then strain into a coup.
