Great cocktail recipes to enjoy this Valentine's Weekend

We asked Daffy's Gin, Darnley's View, Summerhouse Drinks and Petri Pentikäinen, sommelier at Three Chimneys to create some luxurious cocktails to spice up your Valentine's Weekend

Non-Alcoholic cocktails

Summerhouse Mojito

Ingredients:

• Crushed ice
• A lime
• Fresh mint leaves
• A pinch of sugar
• Hint O’ Mint Lemonade by Summerhouse Drinks

Method:

On a chopping board, coarsely chop the mint with the sugar together. Place the mint and sugar in shaker with crushed ice and give a quick shake to coat the ice. Place the ice in a glass. Quarter a lime and squeeze into the glass then add the Hint O’ Mint Lemonade. Add fresh mint leaves and a slice of lime as garnish.

Misty Glens Colada

Ingredients:

• 200ml Misty Lemonade by Summerhouse Drinks
• 50ml light coconut milk
(must be cold)
• 25ml Grenadine blueberries or blueberries to simply garnish

Method:

Mix all ingredients together, stir well and serve.

Petri Pentikäinen's Cured Apple

Petri Pentikäinen, sommelier at the famous Three Chimneys on the Isle of Skye is a fan of Cuddybridge Applie Juice. He created this delicious and refreshing apple cocktail.

Ingredients:

• 25ml of fennel flavoured sugar syrup (see method below)
• Half a lime
• 50ml of Cuddybridge apple juice (I use Braeburn apple juice)
• 75ml of good quality tonic water (I use Walter Gregor from
Summerhouse Drinks)

To make the fennel flavoured sugar syrup
• 100g of sugar
• 100ml of water
• 2 tbsp of fennel seeds

Method:

Bring the ingredients to the boil. Remove from heat and allow to cool for 10-15 minutes before straining.

To make the cocktail:

Mix the sugar syrup, lime juice and apple juice in your glass.

Fill with ice and top up with the tonic water.Garnish with slices of apple.

Darnley's View cocktails

“We looked to New Orleans, New York and master bartenders like Jerry Thomas when creating our Valentine’s Cocktails using Darnley’s View Elderflower and Citrus Gin. These drinks have stood the test of time and we’ve added a few twists as a nod to this romantic date in the calendar.”

Ingredients:

• 45 ml Darnley’s View Elderflower & Citrus Gin
• 15ml Lemon juice
• 7.5ml Sugar syrup
• Top up with Champagne

Method:

Shake the gin, lemon juice and sugar syrup with cubed ice. Strain into a chilled champagne flute and top with Champagne.

Raspberry Gin Fizz

Ingredients:

• 45 ml Darnley’s View Elderflower & Citrus Gin
• handful of raspberries
• 10ml Lime juice
• 20ml Sugar syrup
• Soda water

Method:

In a cocktail shaker, add the raspberries and muddle with the back of a wooden spoon, or
similar. Add ice, then pour in the gin, sugar syrup and lime juice. Shake. Strain into a glass with ice, and top with soda water.

Strawberry Ramos Gin Fizz

Ingredients:

• 45 ml Darnley’s View Elderflower & Citrus Gin
• 15ml Lemon juice
• 15ml Lime juice
• handful of strawberries
• 25ml double cream
• 1 egg white
• soda water

Method:

Combine all ingredients except the ice and soda in a cocktail shaker and shake vigorously for 1 minute. Then add ice to shaker and shake a further minute. Strain into a tall chilled glass and top up with soda.

Daffy's Gin cocktail

Daffy's Rosie and Gin

Ingredients:

• 60mls Daffy's
• 25mls Lime
• 2 bar spoons caster sugar
• 2 dashes rose water
• 50mls milk
• 1 strawberry

Method:

Muddle strawberry in shaker and add remaining ingredients. Shake vigorously and fine strain into a high ball over ice.

Top with soda water and garnish with a strawberry and crushed black pepper.
