The Isle of Raasay distillery, based on the Isle of Raasay off the coast of Skye, has revealed the latest in its Oak Species Maturation Series. The whisky is priced at £90 and uses an unusual cask to deliver a unique flavour.
The latest in a series of releases exploring how the Isle of Raasay whisky matures in different type of casks, the latest Oak Special Maturation Series is matured in Quercus Humboldtii Virgin Colombian Oak casks and is non-chill filtered.
It is a first for the distillery and one of the first whiskies in the industry to be completed matured in the casks, which should provide a distinct flavour palette.
The 50.7% ABV whisky is described as having 'delicious flavours of crème brûlée and heather smoke' with dark fruits and blackberry notes interacting with the signature light peat of the Isle of Raasay whisky.
There will be only 8,500 made available globally and 2,500 are on sale in the UK on the Isle of Raasay Distillery website and selected stockists across Scotland the rest of the UK.
The Isle of Raasay has an extensive whisky history from illicit bottles to the thriving distillery today. Located between the Isle of Skye and mainland Scotland, the distillery's single malt is a lightly peated and is usually matured in first fill Rye whiskey, fresh Chinkapin oak and first fill Bordeaux red wine casks.
The whisky is matured in casks on the Hebridean island and the new Oak Special Maturation Series is a twist on the standard bottles that have proved so popular.
