The firm, which has become a huge success story in recent years, wants to expand its site in Aberdeenshire to incorporate the new facility.
Founded in Fraserburgh in 2007 by James Watt and Martin Dickie, the company set up their flagship headquarters near the town of Ellon in 2011.
And since then global demand for their products has rocketed.
Now the firm want to expand the Ellon site to include a 'sour' brewery which will produce "very sharp and tart tasting" beers.
The move comes after previously announcing an intention to create a range of spirits and a business plan setting a target of producing 100 million litres of beer from the facility by 2019.
A planning application has been submitted to Aberdeenshire Council outlining the expansion of the Ellon site, which claims that increasing demand means that more production space is needed.
The design submission states: "The benefits of the state of the art production facility are only now being realised and projections show that the demand is not waning by any means.
"The proposals allow the unprecedented success of a local based business to further reinforce their identity in the Ellon locality providing further employment opportunities, as well as drawing high levels of visitors for the tours and the like – boosting the local economy as a whole."
The often controversial company, who previously caused outrage by selling beer in stuffed animals as well as promoting high percentage alcohol ales, currently employs nearly 300 people at the Ellon campus.
If approved, the sour brewery will operate as a stand alone facility, run by a team of four people.
Aberdeenshire Council have already agreed to relocate a recycling facility in order to allow for Brewdog's expansion.
The beer firm have also been given the option to acquire a nearby 'waste bulking facility' from the local authority.

"This represents a good deal for BrewDog, for Ellon, for the Council and for Aberdeenshire as a whole.
