David Patterson from Yorkes of Dundee is set to go up against Steven Cusack from Davidsons Butchers in Inverurie this weekend in a high-speed battle of the bangers.
The pair will have just 60 seconds to create as many sausages as they can when the go before the crowds on Saturday at the Taste of Grampian food festival in Inverurie.
Mr Patterson, who has been a butcher for nearly 30 years, claims to have the fastest sausage making technique in the whole of Tayside.
And the 54-year-old has been making mince meat of his work colleagues all week.
They have been lining up at the sausage making machine in a bid to prove themselves faster at frankfurter making - but have all fallen short.
Mr Patterson said: "I'm excited about it but I've had a fair bit of stick from the workers in-house.
"They are all butchers so they've all been trying as well but I've been slapping them down.
"They all came forward, one at a time, and said they could beat me, but nah - I'm like Linford Christie, I'm raring to go."
Meanwhile Davidsons' general manager, Mr Cusack, has also been feeling the heat in the kitchen.
The 29-year-old said: "I've never done anything like this before with Guinness World Records.
"I'm a bit nervous and we've got so much to do with the Taste of Grampian that I've been trying to put it to the back of my head.
"I've not been practising as much as I should have been.
"But you've got to stay confident at this point. I think I can beat the record."
The sausage making record was officially set in June 2015 by Inverness-based Alastair Paul from A & I Quality Butcher, who managed 36 in a minute.
But this has since been beaten, with the current record standing at 44 bangers.
This weekend's record attempt has been organised by Quality Meat Scotland, an initiative that aims to raise awareness of the skills and innovation displayed by traditional butchers throughout the country.
Mart auctioneer Colin Slessor, one of the stars of the popular BBC series "The Mart" is also set to join the pair and try his hand at the art of sausage-making.
Both butchers taking part in this year's contest, are members of the Scotch Butchers Club, the network of around 300 butcher retailers who support the Scotch Beef, Scotch Lamb and Specially Selected Pork brands.
Quality Meat Scotland's Graeme Sharp, who runs the Scotch Butchers Club, said: "There's real excitement building around the event and bets are on to see which butcher will perform best and beat the current record.
"Everyone's looking to get a taste the action, even BBC's Colin Slessor will be trying his hand at the skillful sausage challenge. It's sure to be a landmark moment in Scottish, and indeed global, sausage history!"
The Taste of Grampian festival is now in its 17th year and showcases quality food and drink from across Scotland.
