A taste of the wild at Mallaig’s new food festival

Four top chefs from the Highlands are set to craft an exclusive one-off dinner in celebration of an inaugural food festival, Taste the Wild, on Saturday 10th September.

The four-course feast takes place in Mallaig and Morar Community Centre at 6pm on the Saturday evening, with organisers expecting it to be a fitting finale to the Taste the Wild food festival.

Four different chefs will create a course each using the fantastic Lochaber produce where possible. The dinner is set to take guests on a culinary journey along the famous Road to the Isles.

Director and Chef of Arisaig House, Sarah Winnington-Ingham, said: "Taste the Wild’s Scran & Dram Ceilidh is a celebration of the rich and diverse larder to be found along the Road to the Isles and the outstanding chefs who know and showcase this produce everyday."

With fish and seafood are at the heart of Mallaig’s community, the first two courses will focus on offerings from the sea. Chef Proprietor Josh Kingswood of Arisaig Hotel,  will kick the evening off with a Home-Smoked Scottish Seafarms Salmon and Arisaig Mussel duo. Chef Proprietor Michelle Milligan’s Pan-fried Monkfish with Seafood Veloute follows shortly after, taken from her acclaimed menu at The Steam Inn.

Glenfinnan House Hotel will serve up the main course, ‘A Stalk and Forage’. Chef Duncan Gibson will braise Wild Glenfinnan Venison in a Rich Red Wine Sauce with a complimentary accompaniment of glazed button onions and Arisaig House vegetables.

Chef Proprietor Sarah Winnington-Ingham of Arisaig House will prepare freshly foraged Chanterelle Mushroom Risotto for the vegetarian option.

A Ben Nevis Whisky Pannacotta from the West Highland Hotel’s Head Chef Harry Marshall will top the dinner off and get guests dance-ready for the Glenfinnan Ceildih Band to follow. The ceilidh will see guests dancing into the ‘wee’ hours of the morning in true Scottish style.

Tickets for the four-course dinner and ceilidh cost £35 per person and can be purchased through Eventbrite.

Taste the Wild festival is launching this year in celebration of the quality food and drink along the Road to the Isles. Running for one day only, the festival opens at 11am with gourmet stallholders filling Mallaig Harbour while chef demonstrations will take place throughout the day in the Fish Market. A selection of interactive entertainment will be on offer for visitors of all ages, from The Big Fish Debate to the World Prawn Peeling Championships.
