We've teamed up with Waitrose to give four lucky readers the chance to win some delicious Scottish salmon to enjoy on New Year's Day.

A side of Scottish salmon is the perfect centrepiece for your New Year’s Day family lunch.

Produced for Waitrose by Aquascot in the Highlands, the Clementine and Cranberry Salmon Side £14/570g, is both healthy and fresh, offering an easy, yet impressive feast.  We are offering the chance for four readers to win vouchers to buy their own Salmon centrepiece.

Waitrose works with local producers to bring customers seasonal and sustainably sourced food.  As well as Scottish salmon sides and fillets, the stores also offer fish kettle loan for free – for those who wish to cook a whole salmon from scratch.

Fiona Burrell of the Edinburgh New Town Cookery School offers some quick tips on cooking salmon:

"If baking in the oven, give salmon a good wash to avoid a bitter taste, then put onions, herbs and lemon inside and season with salt and pepper.  Wrap loosely and check it regularly so it doesn’t dry out.

"If cooking in a fish kettle, poach the fish in water which has been boiled with onion, carrot, celery, lemon and herbs. This will bring a lovely fresh flavour to the fish."
