The fillet is cut from the crown of a salmon fillet, cured with brown sugar and sea salt, then gently smoked over oak shavings from retired whisky casks resulting in a mild, delicate flavour.

Angela and David Cockerton, owners of Garleton Lodge, a luxury small hotel in East Lothian, recently launched their new handmade chocolate business – The Chocolate Stag.

David and Angela previously ran a very successful handmade chocolate business before they moved to the Middle East, and relaunching the business has always been part of the couple’s plan since their return to the UK.

Twelve Triangles Christmas cake

Foodies and those that like eating home-baking rather than cooking it will appreciate the sourdough Christmas cake from Edinburgh bakery Twelve Triangles.

Filled with figs, hazelnuts and sour cherries, the cakes have been fermented over 48 hours, which makes them moist and full of flavour.
